Quinoa with Veggies

I'm trying to stay away from meat this week after my horrendous diet last week, so I experimented a little with some Quinoa (tons of protein, fiber and vitamins!).  The husband and the toddler agreed that it was super YUM!
Ingredients
  • 2 cups quinoa
  • 2 cups chicken or vegetable stock
  • 2 cups water
  • 2 tablespoons unrefined olive oil
  • 1 cup frozen vegetables
  • 1/2 cup chopped kalamata olives
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/3 cup parmesan cheese
  • 1/3 cup feta cheese
Directions

1.  Combine everything except the cheeses in a medium sauce pot.  Bring to a boil over medium heat. 

2.  Cook with the lid cracked, stirring occasionally, until all of the liquid is absorbed by the quinoa.  It should take around 30 minutes.

3.  Stir in the cheeses.
DONE!  It was that simple - love meals that are super easy, super nutritious AND super delicious!
