Momma's Meatloaf

This is a pretty basic recipe, but there are endless possibilities!  When I'm feeling creative, I'll add basil & pine nuts (pesto meatloaf), or if we're feeling spicy some cayenne pepper and jalapenos - don't hold back!

Ingredients
  • 1 + 2 tablespoons olive oil (unrefined)
  • 1/2 medium onion, diced
  • 1 - 1.25 pounds ground beef (grass-fed)
  • 2 eggs
  • 3/4 cup bread crumbs
  • 1/2 cup parmesan cheese (not from the green can!!)
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup ketchup
Directions

1.  Heat 1 tablespoon olive oil in a small skillet over medium heat.  Add chopped onion & saute until soft and browned.

2.  In a large bowl, combine onions with 2 tablespoons olive oil and remaining ingredients except the beef and ketchup.  Mix very well.

3.  Add the beef and mix until just combined, being careful not to overmix the beef.

4.  Shape into a loaf and place in a glass baking dish.  Cover with ketchup.  Create a foil "tent" and place over the pan to hold the moisture in, but not touching the top of the meatloaf.

5.  Bake at 350 degrees for about 45 minutes to an hour, or until a meat probe reads 155-160 degrees.

Placing  pan of hot water under the meatloaf in the oven will keep the top from cracking!
