I'm almost certainly allergic to tequila (bummer!), so I've been playing around with rum recipes lately (hence, the basil mojitos...)

This is hands-down my very favorite.  And, you MUST sing the song while you make it :)

Extra tip:  if you pour the coconut milk in an ice cube tray and freeze it ahead of time, it makes an even slushier drink with no chunks!  I am so not a fan of frozen drinks made with ice!

Frozen Fruit Margaritas

A few weeks ago, I had one of those days...

The day started with an entire cup of coffee poured on the changing table, in the laundry hamper, in the dresser drawers, and all over the carpet/rug in Little Bear's room...  An entire box of organic Cheerios smashed into the kitchen floor, the discovery that my favorite beer had been discontinued, a grocery store tantrum (by Little Bear, not me - I promise) & a shattered glass pint jar of raisins later...  Momma needed a drink. 

All of this happened while I was getting the carpet cleaner to clean up the
coffee from his bedroom floor... About 2 seconds after I snapped the picture,
his hand violently swished the cereal ALL over the floor.

Finally home, I headed to the pantry and checked the top shelf.  Nothing.  Well, almost nothing.  I had one bottle of tequila left from our housewarming party 3 years ago & a bottle of melon liquor.  Ugh.  We had no mixers & my days of tequila shots were short-lived and long-gone.  What to do?!

Frozen fruit margaritas!

As if my frustration with the day wasn't enough, there was a weird plastic cap thing on the top of the tequila.  It was some sort of seal, but I could not for the life of me get the damn thing off.  I snapped a pic and texted it to Husband (who was, of course, out of town for the weekend).  No help.

What's that saying?  Where there's (a desperate enough mom and) a will, there's a way?  Something like that.  One butcher's knife and a plastic cap stabbing later, BINGO!
I ended up having to strain the tequila through the mesh strainer from my wine aerator into my measuring (shot) glasses, because there were little bits of plastic all in the bottle...

Anyhow - on to the recipe!

Ingredients

  • 5 cups of frozen fruit (I used about 4 cups of peaches and 1 cup of blueberries)
  • 1/2 cup tequila
  • 1/2 cup juice (I used mango nectar)
  • 1 medium lime, juiced
Directions

Combine everything in the blender and mix on high until it's all smooth.  You may need more or less juice, depending on the moisture content and temperature of your fruit.

This is easily one of the best margaritas I've ever had - soooo refreshing!  It could easily be made with rum for a frozen daiquiri or with vodka for a frozen cocktail.  YUM!

Corona Cocktail

I had this drink at a nail salon last week.  It sounds weird, but it's so yummy!

Ingredients
  • 1 12 ounce can frozen lemonade concentrate (they used pink lemonade, but there are several "mystery" ingredients in the pink version, so I'll use the all-natural regular stuff)
  • 12 ounce corona
  • 6 ounces vodka
Directions

Mix all ingredients together.  Fill the empty lemonade concentrate can half full to measure the vodka more quickly.  Use frozen strawberries to keep it cold.

Serve over ice and enjoy!

Homemade Hot Cocoa Mix

After last week's Bloody Mary recipe, I feel the need to tone it down a bit for this week's Thirsty Thursday post.  This recipe is so easy that it's hard to even call it a recipe.  You'll never buy the processed chemical-filled, pre-made hot cocoa mix again!

Ingredients
Directions

Combine the cocoa and the sugar in a lidded container (I use the cocoa box), and shake well for a minute or so.  That's it!

If the mix is too sweet or not sweet enough for your taste, just tinker with the cocoa-to-sugar ratio until you get it just the way you like it.

I add a scoop of the mix to my coffee in the morning, or it can be added to hot milk for traditional cocoa.  For a special treat, add a few scoops to heavy whipping cream and beat with a whisk until it forms whipped cream - it is a super easy chocolate "mousse" and also makes a great coffee topper!  Store it in a pretty jars for great little Christmas gifts!

It saves well - just follow the earlier of the expiration dates on the sugar and the cocoa.

Bloody Mary Mix

As a compulsive label-reader, I am constantly shocked about ridiculous "hidden" ingredients lurking in seemingly basic products.  I was responsible for picking up the bloody mary mix for Husband to take on his soon-to-be brother-in-law's golf/casino bachelor weekend trip.  I never would have guessed how much crap had been added to the store-bough pre-made mixes... GROSS!

Ingredient list from one bottle:   Tomato Juice, Water, High Fructose Corn Syrup, Salt, Vinegar, Natural Spices, Worcestershire Sauce (Water, Vinegar, Salt, Sugar, Caramel Color, Malic Acid, Dehydrated Onion & Garlic, Food Gums, Dextrose, Spices, Chili Pepper, Spice Extractives, Smoke Flavor), Citric Acid, Sodium Benzoate, Potassium Sorbate, Xantham Gum.

Eh, no thanks.  I think I'll make my own!

Ingredients
  • 64 ounce bottle of tomato juice
  • 2 tablespoons horseradish
  • 6 tablespoons worcestershire sauce (Lea & Perrins has the most natural ingredients)
  • 6 tablespoons hot sauce (I use Franks)
  • 1 teaspoon sea salt
  • 2 teaspoons celery seed
  • 2 teaspoons black pepper (freshly ground is the best)
  • 3/4 teaspoon granulated garlic
  • 2 tablespoons clam juice (optional)
  • 1/4 cup lime juice (fresh squeezed, if possible)
Directions

1.  Pour about 2 cups of the tomato juice into a cup and reserve.

2.  Add remaining ingredients to the juice bottle.

3.  Replace the cap and shake well.

4.  Fill the bottle back up with the reserved juice & shake well.

5.  If you have time to make it ahead, let it sit in the fridge for a couple of days.  The flavors all meld and get extra strong and extra yummy this way!

6.  Serve over ice with vodka (or drink it as is - I love virgin bloody mary mix!).

NOTE:  If you are super brave and like things extra hot (not me!), consider adding a teaspoon or two of red pepper flakes, sriracha, chopped fresh jalapeno, or chili paste.

I like mine topped off with green olive juice and sriracha - yum!

Some 'Nog for the Grown-Ups

A good friend called last week and wanted to make egg nog.  She'd had it the night before and was super excited for us to make it ourselves.  The recipe she wanted to make called for melted vanilla bean ice cream, egg beaters, and spices.  Now, I'm sure it was delicious egg nog, but that just was not a "recipe!"  She very hesitantly gave up on making "the best egg nog" she'd ever had and agreed to let me try a purely homemade recipe.

With the fireplace lit and Christmas presents and wrapping paper strewn across the living room, it was the perfect night for some grown-up egg nog!

Ingredients
  • 2 cups organic whole milk
  • 5 whole cloves
  • 2 teaspoon vanilla extract (or vanilla bean paste)
  • 1 teaspoon ground cinnamon
  • 8 organic egg yolks
  • 3/4 cups organic raw sugar
  • 1 cup bourbon
  • 2 cups organic half and half
  • 1/2 teaspoon fresh ground nutmeg
Directions
1.  Combine milk, cloves, vanilla, and cinnamon in a saucepan.

2.  Heat over low for 5 minutes. Slowly raise heat and bring milk mixture to a boil.

3.  In a large bowl, combine egg yolks and sugar.  Whisk together until fluffy.

4.  Slowly whisk the hot milk mixture into the eggs.  Pour the mixture back into the saucepan.

5.  Cook over medium heat, stirring constantly for about 10 minutes, or until it reaches the desired thickness. Do not allow mixture to boil.

6.  Strain to remove cloves.

7.  Stir in half & half and nutmeg.  If giving some to the kids, separate theirs out first and then add the bourbon.

8.  Top with homemade whipped cream, corn-syrup-free marshmallows & cinnamon for an extra treat!
We drank it warm, but you can also let it sit overnight in the fridge.  YUM!
